Carrot Cake


  • 4 eggs
  • 390g demerara sugar
  • 225g sunflower oil
  • 500g grated carrot
  • 220g plain flour
  • 2tsp bicarbonate of soda
  • 2tsp mixed spice
  • 50g walnuts


  1. Mix eggs and sugar until well combined
  2. Add sunflower oil
  3. Fold in flour, carrot, bicarbonate of soda and mixed spice
  4. Place into baking tray
  5. Top with walnuts
  6. Bake for approx. 35 minutes @ 180 C
