
Carrot Cake
Ingredients
- 4 eggs
- 390g demerara sugar
- 225g sunflower oil
- 500g grated carrot
- 220g plain flour
- 2tsp bicarbonate of soda
- 2tsp mixed spice
- 50g walnuts
Method
- Mix eggs and sugar until well combined
- Add sunflower oil
- Fold in flour, carrot, bicarbonate of soda and mixed spice
- Place into baking tray
- Top with walnuts
- Bake for approx. 35 minutes @ 180 C
