Banana and Chocolate Cupcakes

Ingredients

  • 2 bananas
  • 1 egg
  • 45ml olive oil
  • 100g caster sugar
  • 110g self-raising flour
  • 50g milk or dark chocolate, broken into chunks
  • 2tsp vanilla extract
  • Cupcake paper cases and a muffin baking tray

Method

  1. Preheat oven to 160c and place cupcake cases in tray
  2. Blend bananas, egg, olive oil, caster sugar and vanilla extract until smooth
  3. Pour into a bowl and mix in the flour
  4. Fill each case 2/3 full
  5. Push some of the chocolate deep into the muffin mix and place a piece of chocolate on top
  6. Cook for 30 minutes until golden brown
  7. Once a knife or skewer comes out clean they are cooked to perfection

Tips & Tricks

  • Substitute for plain flour by adding 2 tsp of baking powder
  • Add some nuts with the chocolate
  • Swap chocolate for your favourite berries
