
Banana and Chocolate Cupcakes
Ingredients
- 2 bananas
- 1 egg
- 45ml olive oil
- 100g caster sugar
- 110g self-raising flour
- 50g milk or dark chocolate, broken into chunks
- 2tsp vanilla extract
- Cupcake paper cases and a muffin baking tray
Method
- Preheat oven to 160c and place cupcake cases in tray
- Blend bananas, egg, olive oil, caster sugar and vanilla extract until smooth
- Pour into a bowl and mix in the flour
- Fill each case 2/3 full
- Push some of the chocolate deep into the muffin mix and place a piece of chocolate on top
- Cook for 30 minutes until golden brown
- Once a knife or skewer comes out clean they are cooked to perfection
Tips & Tricks
- Substitute for plain flour by adding 2 tsp of baking powder
- Add some nuts with the chocolate
- Swap chocolate for your favourite berries
